This hearty soup is a great recipe to make with leftover or rotisserie chicken.

Ingredients

  • 2 C. chicken, shredded
  • 3 Tbs. butter
  • 2 Tbs. olive oil
  • 3/4 C. onion, diced
  • 1/2 C. carrots, diced
  • 1/2 C. celery, diced
  • 2 cloves garlic, minced
  • 1/3 C. all-purpose flour
  • 4 C. chicken broth
  • 1 + 1/2 C. half & half
  • 1 lb. potato gnocchi
  • 3 C. spinach
  • 1 Tbs. basil, chopped
  • 1/2 tsp. thyme
  • 1/2 tsp. parsley
  • 1/4 tsp. nutmeg
  • Parmesan, grated
  • salt
  • pepper

  1. Saute the onion, celery, and garlic in the butter and olive oil over medium heat.

  2. Add the flour and make a roux.

  3. Add the half and half.

  4. Cook gnocchi according to package directions.

  5. Add in the carrots and chicken in the roux.

  6. Once the mixture thickens, add the chicken broth. 

  7. Then add the gnocchi, spinach, and seasonings. Let simmer until soup is heated through.

  8. Season with salt and pepper to taste.

  9. Serve with grated Parmesan on top.
