  • 8oz Spaghetti Noodles
  • ½ C Pasta Water, reserved
  • 2 Large Eggs
  • ¾ C Parmesan cheese, grated
  • 4 Slices Pancetta (or Bacon), diced
  • 4 Garlic Cloves, minced
  • Kosher Salt & Freshly Ground Black Pepper
  • 2 tbs Fresh Parsley, chopped

Begin this recipe for copycat Olive Garden spaghetti carbonara by bringing a large pot of heavily salted water to a boil. Once at a rolling boil, add your noodles and let cook until al dente according to package directions. Reserve a half cup of your pasta water once your noodles are finished cooking. Drain and run under cold water.

Next, whisk your eggs and parmesan cheese together in a medium bowl. Continue by heating a large skillet over medium-high heat. Once hot, add your pancetta or bacon and let cook until the pieces are crispy and browned, about eight minutes. Toss your garlic into the pan and let cook for about one minute or until fragrant.
