Copycat P.F. Chang's Mongolian Beef

Ingredients
- ½ tsp ginger, minced
- ½ cup soy sauce
- ½ cup water
- ¾ cup dark brown sugar
- vegetable oil
- 1 lb flank steak
- ¼ cup cornstarch
- 2 carrots, chopped
- 2 small potatoes, chopped
- 1 cups hot cooked udon noodles

Directions
Combine ginger, brown sugar, soy sauce in a bowl and mix
Heat oil on skillet to medium heat
Add noodles and ginger mixture to the skillet for 3 minute
In a separate bowl, add flank steak and cornstarch
Heat oil on skillet over medium heat, fry the steak for about 1 minute then remove and set aside
Add carrots and potatoes to skillet, pour oil over vegetables and fry for 3 minutes
