There's no need to buy expensive Thai noodles when you can make them from home! This flavorful copycat dish is packed full of delicious peanut flavors and topped with green onions.

  • 1 pkg. dried flat rice noodles
  • 3 Tbsp. fish sauce
  • 1/4 C. fresh lime juice
  • 1 Tbsp. white sugar
  • 1 Tbsp. oyster sauce
  • 1 1/2 Tbsp. Asian chile pepper sauce
  • 1/3 C. chicken stock
  • 1/4 C. vegetable oil
  • 1 Tbsp. chopped garlic
  • 8 oz. skinless, boneless chicken breast halves, cubed
  • 2 eggs, beaten
  • 3 C. bean sprouts
  • 4 green onions, chopped into 1 inch pieces
  • 2 Tbsp. chopped peanuts
  • 1/4 C. chopped fresh cilantro

Let the noodles soak at least 20 minutes. Meanwhile, combine the fish sauce, lime juice, sugar, oyster sauce, chile sauce, and chicken stock. Heat a large skillet over high and add the oil. Cook the garlic for 30 seconds and add the chicken. Sauté until the chicken is cooked through, about 5 minutes. Move the skillet ingredients to the side and pour the eggs in the center. Cook until firm and scrambled and add the noodles and sauce. Put in the bean sprouts and green onions. Remove the mixture from the heat and garnish with peanuts. Serve with cilantro if desired.
