  • 4 Tbsp. soy sauce
  • ½ tsp. ground ginger
  • 1 Tbsp. chili vinegar
  • 3 Tbsp. cornstarch
  • salt to taste
  • 1 lb. boneless chicken breast, cut into cubes
  • 4 Tbsp. oil
  • 1 onion, sliced
  • 5 celery stalks, sliced thickly
  • 2 Tbsp. black pepper

Mix the soy sauce and ginger in a small bowl
Mix half the soy sauce mixture with ½ Tbsp. vinegar, cornstarch and a pinch of salt in a bowl
Add the chicken and mix well to cover the chicken with marinade
Let sit for 15 minutes

Heat 2 Tbsp. oil in a hot wok
Add the onion and celery to the hot oil and saute for two minutes
Add the chicken and marinade
Stir in the remaining chili vinegar and the black pepper
Add salt to taste
Serve hot with the sauce formed in the wok, over rice or noodles
