Ingredients

  • 1 C. long grain rice, uncooked
  • 2 C. water
  • 2 eggs
  • 3 Tbs. butter
  • 1/2 C. frozen peas
  • 1/2 C. frozen carrots
  • 1/2 C. white onion, diced
  • 2 Tbs. soy sauce
  • 1/4 tsp. sesame oil
  • Salt and pepper to taste
  • 1 green onion, diced

Directions

Pour water into saucepan over stove and wait until it reaches a full boil. Stir in the rice. Reduce heat to low simmer and let pot sit for 15 minutes with pan lid on top. Place cooked rice in a large bowl. Crack eggs and stir in bowl with 1 Tbs. of butter until fully beaten. Scramble eggs in skillet over stove until ready.


Mix the scrambled eggs into bowl of cooked rice along with frozen vegetables and white onion. Melt 2 Tbs. butter over stove top. When melted, add the rice mixture. Stir and saute for two minutes. Combine soy sauce and sesame oil in a cup before mixing in with frying rice mixture. Saute rice for 7 minutes or until rice is lightly browned. When done, season with salt and pepper. Place in a large serving bowl and garnish with green onions.
