Ingredients

  • 1 Tbs. peanut oil
  • 1 dried red chili
  • 12 oz. chicken breasts, boneless and cut into 1" cubes
  • 1 small red bell pepper, cut into 1/2" pieces
  • 1 green onion with tops, cut into 1/2" pieces
  • 2 stalks celery, cut into 3/4" slices
  • 2 Tbs. water
  • 2 Tbs. dry sherry
  • 1 Tbs. soy sauce
  • 1 Tbs. chili bean sauce
  • 1 tsp. sugar
  • 2 garlic cloves, minced
  • 2 scallions, chopped
  • 1 tsp. grated ginger
  • 2 tsp. rice wine
  • 8-10 dried green chilies, for heat

Directions

Heat oil in a wok. Add chili. Mix in chicken and stir fry for 6 to 7 minutes or until chicken is cooked. Include peppers, onions and celery. Cook until tender. Add remaining ingredients and cook for 5 to 6 more minutes. If you desire, serve over cooked white rice. Add in chilies for extra heat, not to eat.
