  • Marinade
  • 3 Tbs. soy sauce
  • 3 tsp. brown sugar
  • 1 tsp. sesame oil
  • 1 tsp. ginger, minced
  • 1 tsp. garlic powder
  • Salad
  • 4 C. romaine lettuce, chopped
  • 3 C. baby spinach
  • 4 chicken breasts
  • 1 bunch cilantro, chopped
  • 1 can (11 oz.) mandarin oranges, rinsed
  • ¼ C. sliced almonds
  • Wontons, fried
  • Dressing
  • ½ C. rice vinegar
  • 2 Tbs. olive oil
  • ¼ C. sugar
  • 1 ½ tsp. sesame oil, browned
  • ½ tsp. salt
  • Sesame seeds, toasted
  • Pepper

Whisk the marinade ingredients together in a small bowl and let the chicken soak in it for at least two hours. Whisk the dressing ingredients together as well and refrigerate the mixture. Once the chicken is well marinated, cook it in a large skillet on medium-high. Cook it on each side for at least five minutes until the chicken is cooked through. Cut the chicken into strips and combine it with the lettuce, spinach, cilantro,, oranges, and almonds. Toss the salad with the dressing and top with the wontons.
