  • For The Rice
  • 3 ½ C. chicken stock
  • 2 C. long grain rice
  • ¼ C. tomato paste
  • ½ yellow onion, chopped
  • ½ yellow bell pepper, diced
  • ½ tsp. fresh black pepper
  • ½ tsp. sea salt
  • 3 tsp. of minced garlic
  • 1 tsp. paprika
  • For The Squash
  • 1 acorn squash, halved
  • ¼ C. olive oil
  • ½ tsp. sea salt
  • ½ tsp. fresh black pepper
  • ½ tsp. garlic powder

Preheat the oven to 375 degrees. Scoop the inside goop out of the acorn squash and brush the hollowed parts with oil and sprinkle with the salt, pepper, and garlic powder. While that’s cooking, heat a large skillet on medium high and start to saute the onions, bell pepper, and garlic. Add in the chicken stock and tomato paste. Once it begins to boil, cover the skillet and reduce the heat. Once the rice is fluffy, season it with the salt and pepper. Pour the rice in the squash bowls and enjoy!
