  • 1 Tbs. Olive Oil
  • 2-3 Garlic Cloves, minced
  • 1 28 oz. can Crushed Tomatoes
  • 1 28 oz. can Diced Tomatoes
  • 2 C. Vegetable Broth
  • 2 Tbs. Granulated Sugar
  • 1/3 C. Butter
  • 4 oz. Low-Fat Cream Cheese, softened
  • 10 Fresh Basil Leaves, chopped
  • 1/4 tsp. Dried Oregano
  • Sea Salt, to taste
  • Ground Black Pepper, to taste

Warm the olive oil in a large stockpot over medium heat. Add the garlic and sauté until fragrant. Stir in the crushed tomatoes, diced tomatoes, vegetable broth, and sugar. Bring to a boil, then reduce heat to low. Let simmer for 10 minutes. Stir in the butter and cream cheese until fully incorporated. Stir in the basil and oregano, and season with salt and pepper to taste. Carefully pour the soup mixture into a large food processor or blender, and puree until smooth.
