  • 1/4 C. (1/2 stick) Unsalted Butter
  • 1/4 C. All-Purpose Flour
  • 1 C. 2% Milk
  • 8 oz. Low-Fat Cream Cheese, softened
  • 1 tsp. Dry Mustard
  • 1/2 tsp. Sea Salt
  • 2 C. Shredded White Cheddar
  • 1 16 oz. package Elbow Macaroni, cooked and drained
  • 1/4 C. Grated Parmesan Cheese

Melt the butter in a large saucepan over medium-high heat. Whisk in the flour and cook for one minute. Add the milk, cream cheese, dry mustard and salt, and continue to cook, stirring continuously, until sauce is thickened, smooth, and bubbly. Reduce heat to low. Stir in the white cheddar cheese until fully melted. Fold in the macaroni. Sprinkle with parmesan before serving.
