  • 1 chicken breast, thinly sliced at an angle
  • Juice of ½ lime
  • ½ tsp. mild chilli powder
  • 1 garlic clove, chopped
  • 1 tsp. olive oil
  • 2 tortillas
  • 1 avocado, halved and stoned
  • 1 roasted red pepper from a jar, sliced
  • ¼ C. corn kernels
  • ½ onion, sliced
  • ¼ C. tomatoes, chopped
  • ¾ C. chihuahua cheese
  • lettuce
  • a few sprigs coriander, chopped

Mix the chicken with the lime juice, chilli powder, and garlic. Heat the oil in a non-stick frying pan and fry the chicken for a couple of minutes. Set aside. Then, warm the wraps, and squash half an avocado onto each wrap. Add the peppers to the pan to warm them through. To assemble the wraps, pile on the chicken, red pepper, corn, tomatoes, cheese, lettuce, and coriander. Roll up, cut in half and serve.
