  • 1 lb red potatoes; peeled and cut into small cubes
  • 1 yellow onion; chopped
  • 1 small red bell pepped; chopped
  • 1 small green pepper; chopped
  • 2 cloves garlic; chopped
  • 1 ½ Tbs unsalted butter; melted
  • 1 ½ tsp cayenne pepper
  • Salt
  • Pepper
  • Olive oil

Preheat the oven to 425 F.

In a large bowl, put in the potatoes, chopped peppers, onion, garlic, cayenne pepper, olive oil, butter and a bit of salt. Toss all the ingredients together.

Prepare a skillet and transfer the ingredients into it. Allow to bake for 25-30 minutes or until potatoes are crisp and brown. Add more time if needed

Remove, season with some pepper and serve.
