Quesadillas are nice, light, and so many ingredients can be tossed in to make them into a unique dish. The Santa Fe chicken quesadillas at Ruby Tuesday are full of amazing flavors from tomatoes, peppers, and of course the chicken.

Ingredients

  • 2 tbsp. extra virgin olive oil
  • 3 lbs. chicken breast, skin removed
  • 1 red onion, sliced
  • 1 red bell pepper, seeded and sliced
  • ½ cup cilantro, minced
  • 2 cups queso fresco
  • 6 large flour tortillas
  • 6 tbsp. margarine

Heat olive oil in a pan. Cook chicken in pan for about 3 minutes on each side. Remove and dice chicken, set aside. Cook onion, pepper, and cilantro in pan for about 3 minutes. In a separate pan over medium heat, drop in butter and begin frying tortillas. Place cheese, vegetables, and chicken on top of the tortillas. Place another tortilla on top. Flip tortilla when it has turned a golden brown. Cook other side until it has turned a golden brown.
