  • 1⁄3 C. olive oil
  • 3 garlic cloves
  • 1 lb. cooked mussels
  • 1 can crushed tomatoes
  • 2⁄3 C. chicken broth
  • 1⁄3 C. white wine
  • 1 C. heavy cream
  • 1⁄2 C. parmesan cheese, grated
  • 1⁄2 tsp. dried basil, crushed
  • 8 oz. cooked linguine

Heat the oil in a skillet and cook the garlic until tender. Add the tomatoes and broth and bring to a boil. Pour in the wine and cook for 3 minutes while stirring. Reduce the heat and add the cream. Put in the cheese and stir until smooth. Add the mussels to the sauce along with the basil. Pour the sauce over the pasta and toss to coat.
