Ingredients

  • 8 oz. linguine (or other pasta)
  • 1 Tbs. olive oil
  • 2 Tbs. unsalted butter
  • 1 lb. jumbo shrimp (16-24), shelled and deveined
  • 4 cloves garlic, chopped
  • 1 pinch red pepper flakes
  • 1/4 C. white wine
  • 1/4 C. lemon juice (~1 lemon)
  • 1/4 tsp. sugar
  • 1 tsp. lemon zest
  • 1 Tbs. parsley, chopped
  • shaved Parmesan cheese
  • salt and freshly ground black pepper

Directions

Cook pasta according to package instructions. Melt the butter in a pan over medium-high, add oil and shrimp, and cook for 2 minutes. Flip, add the garlic and red pepper flakes and cook for 1 more minute before transferring to a large bowl.
Deglaze the pan using wine, sugar and lemon juice. Simmer for a minute and remove from the heat. Sprinkle seasonings, as well as lemons zest, before tossing in shrimp and pasta. Served immediately with shaved Parmesan cheese and chopped parsley or drizzle a bit of fish sauce for extra oomph.
