Here is a classic chili soup inspired by Zoup! Much like their Spicy Black Bean Chili, this dish brings in a lot of spices and flavor. It's sure to be a hit at dinner or at your next gathering.

  • 1 lb. ground beef chuck
  • 1 tsp. dried thyme leaves
  • 1 clove garlic, minced
  • 2 Tbs. olive oil
  • 1 yellow onion, chopped
  • 2 cloves garlic, chopped
  • 1/2 shallot, chopped
  • 1/2 jalapeno pepper, halved, seeded chopped
  • 1 Tbs. chili powder
  • 1/4 tsp. cayenne pepper
  • Salt, to taste
  • 1 can crushed tomatoes
  • 1cans black beans, drained, rinsed

In a pot, cook the beef chuck with the thyme and garlic. When browned remove and drain beef. Set aside.

In the same pot, heat oil and add the onion, garlic, shallot and jalapeno. Saute until vegetables begin to brown, about 7 to 10 minutes. Add chili powder, cayenne pepper and salt and cook.

Add tomatoes and bring to a boil. Stir in beans and reserved beef and simmer, partially covered, over medium low heat for 1 hour.

Serve warm.
