  • 2 C. all-purpose flour
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1 egg
  • 1 ⅛ C. sugar
  • ½ C. vegetable oil
  • 2 T. buttermilk
  • ½ tsp. vanilla
  • 3 ripe bananas mashed
  • 1/2 C. chocolate chips
  • ½ C. chopped walnuts (optional)

Preheat the oven to 325 degrees. In a small bowl mix together flour, baking soda, and salt. In a large bowl mix together egg, sugar, and vegetable oil. Whisk until well combined. Add dry ingredients in with the wet and continue stirring until a batter forms. Beat in buttermilk, vanilla, and mashed bananas. Once all the ingredients are incorporated fold in walnuts and chocolate chips with a spatula.

Prepare a loaf pan by greasing and flouring it. Pour batter into the pan and place in the oven for 55-65 minutes. A knife should come out clean when the bread is ready.
