Ingredients

  • 3 C. unbleached flour
  • 1 C. sugar
  • 1 Tbs. baking powder
  • 1/2 tsp. salt
  • 1 C. skim milk
  • 2/3 C. applesauce
  • 1/3 C. melted margarine
  • 2 egg whites
  • 1 1/2 C. blueberries
  • vegetable oil spray

  1. Preheat oven to 375 degrees. Blend dry ingredients and set aside.

  2. Combine milk, applesauce, egg whites; blend well.

  3. Add to the dry ingredients and mix with a fork until just blended.

  4. Gently fold in blueberries.

  5. Spoon batter into muffin tins sprayed with vegetable oil. Bake 12 minutes, or until golden brown.
