  • 4 C peanut oil
  • 1 1/2 tsp pepper
  • 2 tsp salt
  • 1 Tbs garlic, minced
  • 2 yellow onions
  • 2 C almond milk
  • 1 Tbs lemon juice
  • 2 C all-purpose flour, divided
  • 1 tsp garlic, granulated
  • 12 oz beer, medium body

Start by mixing almond milk and lemon juice together in a bowl, then letting stand for five minutes.

Slice onions into thick disks, remove their skins, and work them apart into individuals rings. Soak each onion ring in the almond mix for an hour.

Near the end of the onion prep process, heat oil in a heavy cast-iron cooking pot to 350ยบ.

To make batter, mix together one cup of flour, salt and pepper, and garlic in a bowl. Mix the beer with the other cup of flour in a separate bowl.

To batter onion rings, remove them from the almond milk, coat them in the flour bowl, shakes off the excess and then dip in the beer batter until they are thickly coated.

Fry onions rings in the pot until golden brown; remove, let dry on a stack of paper towels, then serve.
