These copycat chicken thighs are even better than the source! They’re sweet and spicy with a hint of sesame flavor. The marinade does all of the work so you don’t have to! Just toss these in the oven and enjoy the crispy Thai flavor.

  • Marinade
  • 3 Tbs. garlic, minced
  • 3 Tbs. fish sauce
  • 3 Tbs. brown sugar
  • 2 Tbs. honey
  • 2 Tbs. Chinese cooking wine
  • 2 Tbs. lime juice
  • 2 Tbs. lemongrass stalk, minced
  • ½ Tbs. black pepper
  • 2 tsp. red chili paste
  • 1 tsp. sesame oil
  • Chicken
  • 2 lb. chicken thighs
  • ½ C. cherry tomatoes
  • Lime, for garnish
  • Cilantro, chopped

Mix the marinade ingredients together in a large bowl, set the chicken and tomatoes inside. Let the chicken marinate for 3 hours. Preheat the oven to 425 degrees. Heat a skillet on medium-high heat and place the chicken in skin side down. Cook the chicken on each side for three minutes. Finish cooking the chicken in the oven for 25 minutes. And baste with the marinade several times as the chicken is cooking. Squeeze a wedge of lime juice on top and the cilantro.
