  • 2 ears of corn, shucked
  • 1/2 T. lemon zest
  • 1 T. lemon juice
  • 3 T. unsalted butter, melted
  • 1/2 T. honey
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 1 cup uncooked quinoa
  • 2 scallions, chopped

Boil corn in a large pot of water. Once the water reaches a boil, turn off the heat and let the pot stand for 5 minutes. Remove corn, let it cool, and cut it off the cob. In a bowl whisk together lemon juice, lemon zest, melted butter, honey, salt and pepper. Rinse quinoa in a sieve until water runs clear. Cook quinoa in boiling water according to package instructions. In a large bowl combine quinoa, corn, scallions and dressing. Season with salt and pepper.
