This easy corn crab salad is a perfect appetizer to serve this Labor Day. The recipe is simple, but the shellfish makes it seem like a fancy appetizer. Serve the corn crab salad on prepared crackers or allow guest to dip crackers into the salad and pile on the crab meat!

  • 1 cup corn
  • 1 ¼ cup chopped crab meat
  • 1 chopped red pepper
  • ½ sliced green onion
  • 2/3 cup cream cheese
  • 1/3 cup mayonnaise
  • 1 cup shredded cheese
  • 2 teaspoon olive oil
  • Crackers

Place the corn in a baking dish and drizzle the corn with olive oil. Coat the corn in oil and roast for 20 minutes at 400 degrees. In the meantime, mix the cream cheese and mayonnaise in a bowl. Add the crab, roasted corn, chopped pepper, onion slices, and cheese. Mix everything together and bake for 20 minutes. Spoon the dip onto prepared crackers or serve the salad next to a bowl of crackers for dipping.
