Corn Cakes

These made an excellent side dish no matter what the meal.

  • 1/2 C. frozen whole corn kernels
  • 2 Tbs. flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1 C. boiling water
  • 1 C. yellow cornmeal
  • 1/4 C. milk
  • 1 egg, slightly beaten
  • 1 Tbs. snipped fresh chives
  • 3 Tbs. cooking oil

In a small bowl stir together flour, sugar, baking powder and salt. Set aside. In a medium bowl stir boiling water into cornmeal to make a stiff mush. Stir in milk until smooth. Stir in corn, egg and 1 Tbs. chives. Add flour mixture and stir until combined. In a large fry pan (cast iron frying pan is best) heat 2 Tbs. oil over medium heat. Drop batter into hot oil and fry for about 3-4 minutes per side turning only once.
