Corn Casserole

My family likes this corn casserole with anything. I usually make this when I make soup. I put in jalapeno peppers for a kick. It's good with or without jalapenos.

Ingredients

  • 1 box Jiffy corn muffin mix
  • 1 15 1/4-oz. can whole kernel corn
  • 1 14 3/4-oz. can cream-style corn
  • 1 C. sour cream
  • 1 stick butter, melted
  • 1 1/2 C. shredded cheddar cheese

Directions

Preheat oven to 350 degrees. In a large bowl, mix corn muffin mix, both cans of corn, sour cream, melted butter and jalapenos (if desired). Bake for 45-50 minutes or until golden brown. Remove from oven. Top with cheddar cheese and return to oven for 5 minutes or until cheese has melted. Let stand for 5 minutes to let cool. Serve.
