A pressure-cooker recipe featuring creamed corn, bacon, onion, and potato.

  • 2 C. diced potatoes
  • 1 C. chopped onion
  • 1 C. chopped bacon
  • 1 1/2 C. water
  • 1 16 oz. can cream-style corn
  • 1 C. evaporated milk
  • Salt and pepper to taste

In a 4 qt. or larger pressure pot, place the potatoes, onion, bacon and water. Cook at 15 lb. pressure for 15 minutes. Add corn and milk, heat another few minutes with lid off, and then serve. Individuals can add salt and pepper to taste. Yield: 4 servings.
