Cornbread Casserole
Ingredients
- 1 box Jiffy cornbread
- 1 medium bell pepper, chopped
- 1 medium tomato, chopped
- 1 can red kidney beans, drained
- 1 bunch green onions, chopped
- 1/4 - 1/2 C. bacon bits
- 1/4 C. sweet pickle relish
- Dressing:
- 3/4 C. mayonnaise
- 1 1/2 tsp sugar
- 1/4 C. sweet pickle juice
Directions
Prepare cornbread according to package directions. Mix together chopped veggies, bacon bits and sweet pickle relish. In a 9-inch square dish, arrange layers of 1/2 prepared crumbled cornbread, then 1/2 of mixed veggies, bacon bits and relish. Spoon over the first half of the cornbread. Then layer the last half of the cornbread and remainder of the veggie mixture. Mix dressing ingredients together and spread on top of the last layer of veggies.
