A very quick and easy recipe for an all-in-one meal. I found this in an old cookbook and have cooked this many times. I always get great compliments. The Jiffy cornbread complements the meat mixture by giving it a sweet taste. I cook this many times and everyone always loves it.

20 min preparation + 18-20 min cooking

Ingredients

  • 1 lb. ground beef, drained
  • 1 onion, chopped
  • 1 can tomato soup
  • 2 cans water
  • 1 can whole-kernel corn, drained
  • 1 chopped green pepper, optional
  • 1 tsp. each salt and pepper
  • 1 Tbs. chili powder
  • 1 pkg. Jiffy cornbread mix

Directions

Brown beef and onion. Add soup, water, salt, pepper, chili powder and corn. Simmer 15 minutes and pour into casserole dish. Mix Jiffy cornbread mix according to package directions and pour over beef mixture. Bake at 350 degrees for 18-20 minutes or until cornbread is golden brown.


You can use a substitute for the tomato soup. I have used Rotel tomatoes (mild) or Italian stewed tomatoes ( I puree tomatoes). This gives it a different and great taste.
