Cornbread Salad
Ingredients
- 1 box Jiffy Cornbread Mix, baked according to directions, cooled and crumbled
- 8-10 strips of crisp fried bacon, cooled and crumbled
- 1 diced green bell pepper
- 1 diced purple onion
- 4 diced med. tomatoes
- 1/2 C. diced sweet pickles
- Dressing:
- 1 C. mayonnaise
- 1/4 C. sweet pickle juice
- 2 Tbs. sugar
Directions
Layer ingredients in a 2-qt. casserole dish in the following order:
1/2 of crumbled cornbread
1/2 of diced vegetables
1/2 of pickles
1/2 of dressingRepeat layers. Top with bacon crumbs. Refrigerate for 2 hours. Mix well before serving.
