Cornbread Salad

A favorite side dish at family reunions and church pot lucks.

Ingredients

  • 1 box Jiffy Cornbread Mix, baked according to directions, cooled and crumbled
  • 8-10 strips of crisp fried bacon, cooled and crumbled
  • 1 diced green bell pepper
  • 1 diced purple onion
  • 4 diced med. tomatoes
  • 1/2 C. diced sweet pickles
  • Dressing:
  • 1 C. mayonnaise
  • 1/4 C. sweet pickle juice
  • 2 Tbs. sugar

Directions

Layer ingredients in a 2-qt. casserole dish in the following order:

1/2 of crumbled cornbread

1/2 of diced vegetables

1/2 of pickles

1/2 of dressingRepeat layers. Top with bacon crumbs. Refrigerate for 2 hours. Mix well before serving.
