Corned Beef Quiche

Perfect for a Christmas morning brunch, or breakfast or dinner!

  • 1 15 1/2-oz. can corned beef hash
  • 1 9-inch unbaked pie shell
  • 2 eggs, beaten
  • 1 4-oz. container whipped cream cheese with chives
  • 1 C. small curd cottage cheese
  • 1/4 C. onion, finely chopped
  • salt and pepper to taste

Preheat oven to 350 degrees. Combine corned beef and onion and put in bottom of pie shell. In a medium bowl, beat eggs until frothy. Add remaining ingredients to eggs and blend well. Pour over corned beef mixture. Bake for 50 minutes. Serve warm.
