This corned beef pie is very simple and easy to make!

  • 1 can corned beef
  • 1 can cream of mushroom soup
  • 1 sm. can mushrooms
  • 1 can or bag mixed frozen vegetables
  • 4 slices bacon, cooked and crumbled
  • 1/4-1/2 C. onion, chopped
  • 1 box instant mashed potatoes, prepared according to box directions
  • French's onion rings
  • shredded cheese (any kind)

Place corned beef and vegetables in casserole dish, add cream of mushroom soup and mushrooms. Fry bacon until nice and crispy and saute onions. Crumble bacon and add onions. Prepare instant mashed potatoes according to package directions. Add to the top of your casserole. Top with your favorite cheese. Add onion rings to the very top. Place in preheated 375-degree oven and bake for 35-45 minutes.
