Corned Beef Spread

My dad will make this spread every time he goes to a family gathering. His big Irish family loves their corned beef, so they especially love this corn beef spread. Try serving it with rye bread.

6-8 servings

Ingredients

1 (12 oz.) can corned beef
1/4 C. sweet pickle relish
1/4 C. horseradish
1/4 C. chopped onion
1 med. stalk celery, finely diced
1 boiled egg, finely chopped
mayonnaise (just enough for consistency)

Directions

Combine corned beef, pickle relish, horseradish, mayonnaise, onion, celery, and egg. Refrigerate. Once cold its ready to serve with your favorite crackers.
