Ingredients
- 4 links Italian sausage, about 1 lb.
- 4 Cornish game hens, about 1 lb. each
- 2 Tbs. olive oil
Directions
Preheat oven to 475 degrees. Cut the sausage links into 1-inch pieces. Then cook them in a large frying pan over medium heat for 3 minutes. Drain and let cool. Rinse the hens and pat them dry inside and out. Stuff the cavities with the sausages. Cross bone ends of the legs and tie them together. Rub the skin with olive oil. Place the hens in a small roasting pan. Roast for 15 minutes. Turn the heat down to 350 degrees and roast for 45 minutes more, or until juices run clear when the meatiest part of the thigh is pierced.
