Here's an appetizer you don't usually see at parities, but it's absolutely delicious! Stuffed with carrots and potatoes, these cornish pastries are exactly what you need for any winter party.

  • 2 pkg (11-oz.) piecrust mix
  • 3 C. potatoes, thinly sliced
  • 1 C. carrots, chopped
  • 1/4 C. parsley, chopped
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 lb. ground beef chuck
  • 1/4 C. butter
  • 1 egg, beaten

Follow directions to make pie dough. Form into ball. Wrap in wax paper and refrigerate until ready to use.

For filling, mix ingredients in a large bowl. Preheat oven to 425 degrees F. Divide pastry into 8 parts on a floured surface. Roll each part into a 8-inch circle. Moisten edge of circle. Spread 1/2 C. filling on each circle half. Dot with butter. Fold over edges. Make two holds in center for steam to escape. Brush with egg.

Bake pastries on cookie sheet for about 25 to 30 minutes. Serve hot.
