Cottage-Cheese Pancakes
Ingredients
- 6 large eggs
- 1 C. lowfat small-curd cottage cheese
- 4 Tbs. vegetable oil
- 1 tsp. vanilla extract
- 1/2 C. all-purpose flour
- 1 tsp. salt
- 1/2 tsp. baking powder
Directions
Blend all ingredients until smooth. Measure out about 1/4 C. of the batter and cook in large skillet or griddle until bubbles form on top. Flip and cook until lightly browned. Serve with syrup or fruit.
