  • 1 1/3 C. all-purpose flour
  • 1/3 C. sugar
  • 1/2 tsp. baking soda
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 C. milk
  • 1 C. low-fat cottage cheese
  • 1/2 C. blueberry jam
  • 3 Tbs. butter, melted
  • 2 large egg yolks
  • 1 tsp. vanilla
  • 2 large egg whites

Butter skillet and let it warm up over medium heat. Mix flour, sugar, baking soda, baking powder and salt in a large bowl. In a separate bowl, beat milk, cottage cheese, butter, blueberry jam, egg yolks and vanilla.

Combine both mixtures and whisk them together. Beat egg whites until stiff and fold in batter. Spoon 1/3 C. batter and cook until pancake starts bubbling. Flip and cook until lightly browned.
