  • 12 ounces potatoes
  • 1 eggplant
  • 1 courgette
  • 2 bell peppers
  • 1 cup sliced onion
  • 2 tablespoons olive oil
  • 1 teaspoon basil
  • ½ teaspoon chives
  • 4 minced garlic cloves

Begin by cutting the potatoes into 1 ½ inch chunks and chopping the peppers into small squares. Slice and quarter the eggplant and slice the courgette. Preheat the oven to 425 degrees F. Spray a roasting pan with cooking spray and combine the potatoes, eggplant, bell peppers, courgette, and onion slices in the dish. In a small bowl, whisk the olive oil, vinegar, basil, and garlic together. Season with salt and pepper and continue whisking. Drizzle this sauce over the veggies and toss. Roast for 45 minutes, but stir halfway through.
