  • 2 Tbs. olive oil
  • 1 Tbs. minced garlic
  • 1 can chicken broth
  • 1 1/2 C uncooked couscous
  • 2 C tomatoes, chopped
  • 1 lb. skinless, boneless chicken breast, halved
  • Salt, to taste
  • Pepper, to taste
  • 1/3 C basil
  • 2 Tbs. balsamic vinegar
  • 4 slices mozzarella cheese

Heat olive oil in a pot. Add garlic and broth. Cook until mixture simmers.

Gradually stir in couscous. Cover and cook for 10 minutes.

In a skillet, heat olive oil. Season chicken breast with salt and pepper and grill until chicken reaches preferred doneness.

Stir in the tomato, chicken, basil and vinegar to couscous mixture.

Serve on plate and melt mozzarella cheese slices over chicken breast.
