Couscous Appleseed

I became intrigued with the new age interest in couscous so I started playing with options, much as I started cooking rice in different juices. This one became an instant favorite of the kids. This delicate side will work well with beef, pork, chicken or seafood if it is not too spicy. It also works well as a dessert if you like the simplcity of rice pudding or flan.

  • 1 pkg. original couscous (that makes 8 servings)
  • apple juice
  • 1/2 C. slivered almonds
  • 1/2 C. golden raisins
  • 1/8 tsp. cinnamon

Substitute the amount of water in the package instructions with the apple juice. Combine all but couscous in a pan and bring to a boil. Remove from heat and add couscous. Cover and let stand. Remove lid and fluff periodically.
