  • 3 C. cherry tomatoes, halved
  • 2 cucumbers, seeded, and diced
  • 1 lemon, juiced
  • 3 tsp. kosher salt
  • 1 1/2 C. instant couscous
  • 2 C. water
  • 1 tsp. lemon zest
  • 1/4 C. extra virgin olive oil
  • pinch cayenne
  • 1/2 C. torn mint leaves, stems saved
  • 1/2 C. roughly chopped flat leaf parsley, stems saved
  • 3 scallions chopped
  • 1/2 C. toasted pine nuts (optional)

Place the couscous in a large bowl. In a small bowl, toss together tomatoes, cucumbers, two tablespoons of salt, and lemon juice. In a medium saucepan, bring water, lemon zest, three tablespoons of oil, remaining salt, cayenne, and herb stems to a boil. Pour on top of couscous, stirring to separate clumps. Cover and let sit for five minutes. Using a fork, remove zest and stems. Add tomato mixture, scallions, mint, parsley, and optional pine nuts. Drizzle with any remaining oil and serve.
