Rarely do we consider salad as a main course. When the main ingredient is nutritious and filling couscous, however, the game changes. Throw in some tomatoes and onions, and enjoy this awesome dinner for the family!

  • 1 C. couscous
  • 8 oz tomatoes, cut into small pieces
  • 1/2 C. chives, chopped
  • 4 Tbs. onions, chopped
  • 4 Tbs. balsamic vinegar
  • 1 Tbs. olive oil
  • 1 tsp. pepper
  • 2 tsp. salt

Boil salted water in a saucepan. Toast couscous in a separate pan for about 7 minutes. Add couscous to boiling water and cook for about 6 minutes. Drain couscous, then rinse under cold water until cool. In a bowl, combine couscous, tomatoes, chives, onions, vinegar, olive oil, salt, and pepper. Mix well, and let stand for 15 minutes before serving.
