This is one of my favorite lunches to bring to work!

Serving Size / Yield

4-6 servings

Ingredients

  • one 5.7-oz. box herbed chicken couscous
  • 1 red bell pepper, julienned
  • 1 green bell pepper, julienned
  • 2 sm. yellow squash, sliced
  • one 16-oz. pkg. frozen mixed vegetables, thawed
  • one 10-oz. can French onion soup
  • 1/4 C. butter, melted
  • 1/2 tsp. seasoned salt

Directions

In a slow cooker sprayed with vegetable cooking spray, combine all ingredients plus 1 1/2 cups water. Mix well. Cover and cook on low for 2-4 hours.
