Cousin Patty's Carrot Souffle

Ingredients
- 3/4 C. sugar
- 3 Tbs. flour
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1 tsp. baking powder
- 1 stick (1/4 lb.) butter, softened
- 1 tsp. vanilla
- 2 Tbs. rum (optional)
- 1 (16-oz.) can carrots, drained
- 3 eggs
Directions
Preheat oven to 350 degrees. Whisk together sugar, flour, salt, pepper, and baking powder. Combine all ingredients in blender and blend thoroughly. Pour into greased casserole dish and bake for 45 minutes. Serve hot. Serves 4-6 hungry hogs!
