  • 5 C. chicken broth
  • ½ lb. ground chicken
  • 1 medium egg yolk
  • 25 (3.5 in.) wonton wrappers
  • 5 cloves garlic, minced
  • ¼ C. green onion, finely chopped
  • 2 Tbs. fresh ginger, minced
  • 1 Tbs. sesame oil
  • 2 tsp. soy sauce
  • 2 tsp. rice wine vinegar
  • 1 tsp. crushed red pepper

In a large saucepan, heat ½ Tbs. of the oil then saute 1 Tbs.of ginger and 4 Tbs. of garlic for about 2 minutes. Pour in the chicken broth and let it simmer on low (about 20 minutes). While the broth is simmering, mix together the remaining ginger, garlic, chicken, oil, vinegar, soy sauce, egg, and red pepper. Lay out the wonton wrappers and add a teaspoon of the mixture into each. Wet the edges of the wrapper and fold them into triangles. Press down around the edges of the filling to eliminate air bubbles. Add the wontons to the broth and turn the heat up to medium (on the higher side). Let this cook for about 5 minutes or until the filling is completely cooked through.
