Crab and Spinach Soup

A Chinese soup that's really fast to make.

Ingredients

  • 1/2 lb. fresh crabmeat or 1 6 oz. can crab, drained and flaked
  • 6 C. chicken broth
  • 1/2 C. onion, chopped
  • 3 Tbs. dry sherry
  • 1 tsp. grated ginger
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • 4 C. fresh spinach, washed and shredded

Directions

Combine broth, onion, sherry, ginger, salt and pepper in large pot or Dutch oven. Bring to boil. Add spinach and crab. Reduce heat, cover and simmer 8-10 minutes.
