Ingredients

  • 3/4 C. butter
  • 3/4 C. flour
  • 3 Tbs. tomato paste
  • 1 1/2 C. finely chopped onions
  • 1 C. finely chopped celery
  • 1/2 C. chopped green onions (green only)
  • 1 Tbs. chopped garlic
  • 1/3 C. chopped green bell peppers
  • 3 Tbs. chopped parsley
  • 8 C. chicken stock
  • 1 Tbs. Lea Perrin
  • 1 bay leaf
  • 1 tsp. thyme
  • 1/4 tsp. white pepper
  • 1/8 tsp. cayenne pepper
  • 1/4 tsp. ketchup
  • 1 lb. lump crab meat

In a heavy pot, on medium heat, melt butter. Add flour and cook until golden brown. Add tomato paste, onions, celery, green onions, bell peppers and garlicĀ - cook until tender (about 10 minutes). Slowly add chicken stock and the rest of the ingredients except the crab meat. Leave uncovered and simmer for 45 minutes. Add crab meat and cook until crab is hot (about 5 minutes). Serve in a soup cup and sprinkle with parsley.
