Ingredients

  • 1 lb. crabmeat, picked over well
  • 2 hard-cooked eggs, chopped
  • 2 stalks celery, sliced diagonally
  • 1 sweet red pepper, julienned
  • 1/3 C. chopped parsley
  • 1/3 C. French or Italian dressing
  • salt and pepper to taste
  • fresh spinach leaves

Directions

Mix all ingredients except spinach leaves. Season to taste. Serve on a bed on fresh spinach leaves.
