Crab Salad

Ingredients
- 1 lb. crabmeat, picked over well
- 2 hard-cooked eggs, chopped
- 2 stalks celery, sliced diagonally
- 1 sweet red pepper, julienned
- 1/3 C. chopped parsley
- 1/3 C. French or Italian dressing
- salt and pepper to taste
- fresh spinach leaves
Directions
Mix all ingredients except spinach leaves. Season to taste. Serve on a bed on fresh spinach leaves.
