Cracked Buckwheat Bread
Ingredients
- 2 1/4 C. white rice flour
- 1 C. brown rice flour
- 1 Tbs. guar or xanthan gum
- 3 Tbs. brown sugar
- 1 1/2 tsp. salt
- 3 Tbs. milk powder
- 2 tsp. dry yeast
- 1 3/4 C. water
- 3 Tbs. vegetable oil
- 3 medium eggs
- 1 tsp. vinegar
- 3 Tbs. cracked buckwheat
- 2 Tbs. pepita seeds
Directions
Mix liquid ingredients together in a small mixing bowl. Do not use electric or hand mixer as this will aerate the mixture. Mix dry ingredients together in a large bowl. Using a pliable spatula, combine liquid and dry ingredients. Mix to a soft dough ensuring all ingredients are well combined. Mix in cracked wheat and peptia seeds. Spoon into bread pan, pressing down with a spatula, to eliminate air bubbles. Allow to prove till well risen. Bake in a medium to hot oven. 400-450 degrees for approximately 45 minutes.
