Cracked Pepper, Bacon and Brie Morning Muffins
Ingredients
- 3 C. flour
- 1/2 tsp. salt
- 1 tsp. dry mustard
- 2 tsp. freshly ground black pepper
- 1 8-10 oz. wheel brie cheese, rind removed and cut into small cubes, divided use
- 5 slices Applewood smoked bacon, fried crisp and crumbled
- 1 lg. ripe avocado, peeled, pitted and chopped
- 2 green onions, cropped and chopped
- 1 C. grated Monterey Jack cheese
- 2 extra large eggs
- 1 3/4 C. whole milk
- 1 stick unsalted butter, melted
Directions
Preheat oven to 375 degrees. Grease two 6-muffin-large muffin tins. Sift together flour, baking powder, salt, dry mustard and pepper in large bowl. In another bowl, place half of the brie, crumbled bacon, avocado, green onions, Monterey Jack cheese and lightly toss ingredients. Make a well in the center of the flour mixture. In another bowl, beat eggs until light, add milk and melted butter and when well mixed, pour into well with dry ingredients. Stir ingredients together and then toss in bacon/cheese mixture. When incorporated, pour evenly between the 12 muffin cups. Top each with a piece of brie and place in hot oven to bake for 22-24 minutes, or until toothpick inserted in middle comes out clean. Serve piping hot from the oven.
