  • 2 lbs. bottom or top round steak, cut into 4 portions and tenderized
  • 1/2 C. flour
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1 large egg
  • 2 T. water
  • 3/4 C. buttermilk baking mix
  • 1/3 C. vegetable oil
  • 1/4 C. fried meat grease
  • 1/4 C. flour
  • 1 sausage patty, cooked and crumbled
  • 1/4 C. bacon bits
  • 2 C. milk
  • salt
  • fresh ground pepper

Preheat oven to 150°F. In one dish, combine flour, salt, and pepper. In another dish, combine egg and water. In yet another dish, place baking mix. Coat each steak in flour, dip in egg, and coat with baking mix. Heat oil in a large frying pan over medium heat. Once hot, add in steak and fry each side until golden brown. Transfer to a baking dish and keep steaks warm in your preheated oven.
Measure 1/4 cup drippings from frying pan and pour out the rest. Place back in pan and add 1/4 cup flour, stirring until blended. Add milk and stir constantly until thick and bubbly. Add salt, pepper, sausage, and bacon bits. Stir well and pour over steaks. Serve with mashed potatoes as seen in our Cracker Barrel meatloaf recipe!
